Stovetop Granola

1 TBS. olive oil
2 c. old-fashioned oats
2 TBS. honey
3 TBS. butter
1/3 c. brown sugar
Heat oil in lg. skillet; add oats. When oil has been absorbed, place on parchment paper. Return skillet to burner & add honey, butter & brown sugar. When combined & bubbly, return oats to skillet. When oats have been well-coated, remove to parchment paper to cool. Add sliced almonds & dried cranberries (or nut/fruit combination of your choice). Store in tightly covered container.
